It’s pancake day or (shrove Tuesday) in the UK today. Signalling the last day of fat eating, before Lent and then the celebration of Easter. I’m not usually a recipe sharer here but cooking is totally creative and pancakes make the perfect canvas base for getting creative with ingredients. What will you add to yours?

In our house we are big fans of American style pancakes which we have often on Sunday mornings. It’s a bit of a family tradition to have pancakes with bacon and maple syrup and blueberries and sometimes strawberries. Growing up I remember always setting off the smoke alarm situated just outside the kitchen door whilst heating up the frying pan to make french style crepe pancakes. We ate those with simply with lemon juice and a sprinkling of sugar.

This year we will probably make American style pancakes, smaller and fluffier because then it will suit a more well rounded meal, (main and dessert together), with sausages, bacon, maple syrup, blueberries and raspberries! 😉
